BBQ Sweet Potato Salad

Recipe serves 4

Ingredients:

- 1 head kale, chopped

- 3 sweet potatoes, diced

- 3 tbsp BBQ sauce

- 1 can sweetcorn, drained

- 1/2 avocado, sliced

- 1/2 cup almonds, crushed

For the dressing:

- 1 cup tahini

- 1 tbsp honey

- Juice of 1/2 lemon

- To serve: crispy quinoa (optional)

Instructions:

- To make the dressing, whisk all the ingredients together and add cold water to thin until the dressing reaches the right consistency.

- Preheat your oven to 190C. Toss your sweet potatoes with olive oil, salt and pepper. Roast in the oven for 45 minutes or until starting to brown, then toss with your BBQ sauce. Roast again until golden brown. Remove and let cool.

- Toss your kale and corn with olive oil, salt, pepper and the tahini dressing. Top with your sweet potato and sliced avocado. Finish with your almonds and quinoa.
