Breakfast BLT

Recipe makes 1 sandwich

Ingredients:

- 2 slices sourdough, toasted

- 3 slices tomatoes

- 1 avocado, smashed

- Squeeze of lemon juice

- 2 slices white onion

- 4-5 leaves lettuce

- 3 slices bacon

- 1 egg

Instructions:

- Slice your tomato and season with salt and pepper

- Smash your avocado and season with salt, pepper and lemon juice for the guacamole

- In a hot pan, fry your onion slices until charred on each side. Season with salt and pepper.

- Fry your egg until the whites are set but the yolk is still runny. Remove from the pan and season with salt and pepper.

- Fry your bacon until golden brown and crispy. Remove with a spatula and let drain on paper towels.

- To assemble your sandwich, layer your toasted sourdough with your guacamole, lettuce, tomatoes, onion and bacon. Top with your fried egg and sourdough. Slice and enjoy!
