Chorizo Shakshuka

Recipe serves 3-4

Ingredients:

- 2 onions, sliced

- 1 red bell pepper, diced

- 120g chorizo, diced

- 3 garlic cloves, sliced

- 1 tbsp tomato paste

- 6 small tomatoes, roughly diced

- 1 400g can chopped tomatoes

- 3 tsp paprika

- 4 tsp cumin

- 2 tsp cayenne

- 5 eggs

- 50g feta, crumbled

- 10g parsley, roughly chopped

- 4 slices toasted sourdough

Instructions:

- Heat olive oil on medium heat in a pan and add in your onions. Cook until browned and caramelised. Add in your bell peppers and cook until softened. Add in the chorizo and cook until softened, before adding in your garlic. Cook until the garlic is fragrant. Add in your tomato paste and cook until darkened.

- Add in your chopped tomatoes and cook until softened. Add in your canned tomatoes followed by the cumin, cayenne and paprika. Season with salt and pepper. Let the mixture simmer until slightly thickened.

- Make wells in the tomato sauce and crack in your eggs. Salt and pepper the tops of the eggs and cover the pan. Let simmer on medium heat.

- Remove from the stove just before the eggs are cooked to your liking (they continue to cook in the sauce) and top with feta and parsley. Serve with toasted sourdough.
