Christmas Baked Salad

Recipe serves 2

Ingredients:

- 200g Brussels sprouts, finely chopped

- 1 head curly kale, finely chopped

- 1/2 cup dried cranberries

- 1/2 cup chopped pecans

- For the dressing: 1 tsp mustard, 1 tsp apple cider vinegar, 1 tsp olive oil, 1 tsp honey (increase to 2 tsp of each if you please)

Instructions:

- Toss your Brussels sprouts with salt, pepper and olive oil. Roast in the oven at 190C until golden brown and crisp. Repeat with your kale. Let both greens cool.

- Toss the kale and Brussels sprouts with cranberries and pecans. Whisk the ingredients for the dressing and season with salt and pepper (I sometimes leave out the olive oil if my greens are oily enough and the honey if my cranberries are extra sweet). Toss the dressing with the salad and serve.
