Fig and Whipped Ricotta Salad

Recipe serves 4

Ingredients:

- 3-4 heads baby gem lettuce

- 4 figs, quartered

- 250g ricotta cheese

- 75ml balsamic vinegar

- 1 tsp maple syrup

- 1/4 cup pistachios, chopped

Instructions:

- Reduce balsamic vinegar in a saucepan until able to drizzle. Transfer to a bowl and let cool, then add in maple syrup and season with salt and pepper

- Wash and chop baby gem lettuce and toss with olive oil. Arrange on your serving platter.

- Arrange figs on top

- Whip your ricotta and season with salt, then dollop on top. Sprinkle pepper over the ricotta.

- Drizzle balsamic reduction over the salad, then top with chopped pistachios.
