French Onion Soup

Recipe serves 6

Ingredients:

- 3 tbsp butter or olive oil

- 10 onions

- 4 cloves of garlic

- 3 bay leaves

- 4 sprigs of thyme

- 3/4 cup of red or white wine

- 8 cups of low sodium beef broth

- 2 tbsp flour (optional)

- To serve: semi-toasted sourdough, shredded gruyere, chives

Instructions:

- Thinly slice onions, then place in a pot with butter or oil, adding in the garlic, and cook on low heat until the onions are caramelised and golden

- Add wine to deglaze, then simmer until the wine has evaporated. Sprinkle flour over the onions.

- Add beef broth, bay leaves and thyme, and let simmer for 30-45 minutes, until reduced slightly. Discard the herbs.

- Season with salt and pepper, and ladle into oven-proof bowls. Top with toasted sourdough, cut to fit if necessary, and a generous serving of gruyere, and place into a grill heated to 200C, until the cheese bubbles and browns

- Serve with chives and a sprinkle of black pepper
