Gochujang Roast Chicken

Recipes serves 4

Ingredients:

- 8 chicken thighs

- 2 tbsp gochujang

- 4 tbsp soy sauce

- 1-2 tbsp honey

- 4 cloves garlic, minced

- 2 tsp sesame oil

- 2 tbsp korean chilli flakes

To roast:

- 2 leeks, sliced

- 2 onions, sliced

- 4 cloves garlic

- To serve: sliced spring onions and white sesame seeds.

Instructions:

- Marinate the chicken thighs with the gochujang, soy sauce, honey, garlic, sesame oil and chilli flakes. Season with pepper. Leave for half an hour (or overnight) in the fridge.

- In a lined baking tray, lay out your chicken thighs. Pour over the sliced leeks, onions and garlic cloves. Drizzle with oil and season with salt and pepper.

- Place in a 200C preheated oven for 40-45 minutes, or until the chicken is cooked and the vegetables are nicely charred, basting twice.

- Remove the chicken from the oven and serve with the leeks and onions. Garnish with spring onions and sesame seeds.
