Greek Chicken Pita Wraps
Recipe serves 4
Ingredients:
For the salad:
- 2 heads baby gem lettuce, chopped
- 1 cucumber, diced
- 1 pack cherry tomatoes, quartered
- Juice of 1/4 of a lemon
- 1 tbsp olive oil
- 1 tin chickpeas, drained and rinsed
- 50g feta (optional)
For the chicken:
- 4 medium sized chicken breasts
- 2 tbsp za’atar
- 3 tsp paprika
To serve:
- 4 pita breads
- 1 tub tzatziki (or make your own with grated cucumber, mint, lemon and greek yogurt)
- 1 tub hummus
- Lemon wedges
Instructions:
- Place your diced cherry tomatoes and cucumbers in a colander and salt generously. Let drain while you prepare the rest of your ingredients, for about 10-15 minutes. Combine with the rest of the salad ingredients and season with salt and pepper to taste. Add more lemon juice if necessary.
- Marinate your chicken breast with the za’atar, paprika, salt and pepper. Heat oil in a pan on medium heat and pan fry your chicken until golden brown on each side and cooked. Let rest, then dice into cubes.
- Place your pitas in the oven to warm, then cut in half and open. Spread hummus and tzatziki inside, and fill with your salad and chicken. Finish with a squeeze of lemon juice.
