Miso Banana Bread

Recipe makes 1 loaf

Ingredients:

- 1/3 cup olive oil

- 1/4 cup maple syrup (add up to 1/2 a cup for a sweeter loaf)

- 2 eggs

- 2 and a half ripe bananas

- 1/4 cup of milk

- 2 tbsp miso

- 1 tsp baking soda

- 1 cup flour

- 3/4 cup almond flour (or replace with more AP flour)

- To top: bananas and sesame seeds

Instructions:

- Preheat oven to 165C

- Whisk together oil and maple syrup, then add in the eggs and whisk to combine

- Add in the mashed bananas and milk, and mix. Add in the miso.

- Combine the dry ingredients in a separate bowl, then add into the wet ingredients. You might need a tad bit less flour, so add 1 1/2 cup first and check the consistency.

- Oil your loaf pan thoroughly and line with baking paper. Pour the mixture in. Top with sliced bananas, and sprinkle with sesame seeds.

- Bake for 40-50 minutes or until a wooden skewer comes out clean.

- Let cool before slicing
