Quinoa Tabbouleh

Recipe serves 4

Ingredients:

- 1/2 cup quinoa

- 1 pack cherry tomatoes, cut into eighths

- 2 cucumbers, deseeded and cubed

- 1/2 cup parsley, finely chopped

- 1/2 cup mint, finely chopped

- 1/2 cup cranberries

- 1/2 cup roasted pistachios, chopped

- Juice of 1 lemon

- 1 tbsp pomegranate molasses

Instructions:

- Cook the quinoa according to package instructions. Set aside and let cool.

- Place your chopped cherry tomatoes and cucumber into a colander and season generously with salt. Let drain over the sink (this stops the salad from getting too wet).

- In a large bowl, add your quinoa, cherry tomatoes, cucumber and herbs. Squeeze over the lemon and pomegranate molasses. Toss, and season with salt and pepper to taste. Drizzle with olive oil if necessary.

- Top with the nuts and cranberries before serving.
