Tuna Salad

Recipe serves 4

Instructions: 

- 1/2 onion, sliced

- 6 tbsp red wine vinegar

- 1 garlic clove, minced

- 300g tuna, drained

- 500g medium-sized tomatoes, quartered

- 2 cucumbers, cut into chunks

- 1 can sweetcorn, drained (400g)

- 1 bunch basil, torn

- 1/2 loaf sourdough, cut into large chunks

Instructions:

- Toss your onion with the red wine vinegar, garlic and 2 tbsp olive oil. Season with salt and pepper and set aside for at least 30 mins.

- Salt your tomatoes and let drain in a colander

- Toss your bread with olive oil, salt and pepper. Place on a tray in the oven and let toast until golden brown.

- To the onion, add the tomatoes, cucumber, corn, basil and bread. Toss with additional olive oil and red wine vinegar if necessary. Salt and pepper to taste.

- Top with your tuna and finish with a nice glug of olive oil.
