Pomegranate Chicken with Preserved Lemon

Recipes serves 4

Ingredients:

- 4 chicken thighs/legs

- 3 tbsp pomegranate molasses

- Rind of 1 preserved lemon, diced

- 6 cloves garlic, peeled and crushed

- 1 tsp chilli flakes

- 2 tsp fennel seeds

- 2 onions, sliced

- 2 limes, sliced

- Coriander, sliced spring onions and lime, to garnish

Instructions:

- Season chicken with salt and pepper and sear in a hot pan until the skin is starting to crisp up

- Toss onions with olive oil, salt and pepper in a baking tray and place chicken on top. Rub chicken with pomegranate molasses, olive oil, salt and pepper. Place garlic cloves and preserved lemon under the skin of the chicken. Season with additional fennel seeds and chilli flakes.

- Place in an oven preheated to 170C for about 45 minutes, or until the internal temperature of the chicken reaches 165C. Baste once or twice with the juices.

- Serve with couscous, salad or rice. Finish with a drizzle of pomegranate molasses, coriander, spring onions and a squeeze of lime.
