Yuzu Tuna Poke

Recipe serves 4

Ingredients:

For the tuna:

- 600g sashimi grade tuna, diced

- 2 tsp white sesame seeds

- 2 tsp black sesame seeds

- 6 tbsp soy sauce

- 2 tbsp mirin

- 4 tbsp sesame oil

- 4 tbsp yuzu

- 2 tsp minced garlic

- 1 tsp chives, finely chopped

Toppings:

- 1 cup mango, cubed

- 1 cup cucumber, cubed

- 1 avocado, diced

- 1 cup edamame, steamed

- 2 cups sushi rice, cooked

To serve:

- Chopped chives, fried onions, additional sesame seeds, chopped seaweed, ikura and wasabi

Instructions:

- Place tuna in a large bowl and add marinade ingredients, mixing to combine. Place in fridge for 5-10 minutes while you prepare the rest of the ingredients.

- Mix the tuna with half the mango and edamame, leaving the rest to serve.

- Fill each bowl with rice, and top with seaweed, diced cucumbers, mango, edamame and avocado. Spoon the tuna mixture on top. Garnish the tuna with sesame seeds, chives and fried onions. Spoon over some ikura and finish with a dollop of wasabi on the side.
