Big Breakfast

Making a big breakfast is pretty self explanatory, but here’s how I like to make each element - everything goes in the oven and is taken out when it’s ready!

Recipe serves 4

Ingredients:

- 8 sausages

- 12 slices bacon

- 4 large tomatoes

- 4 slices bread

- 8 eggs

- 2 large avocados

- To serve: black pepper, finely chopped parsley, ketchup/mustard if you please

Instructions:

- Preheat the oven to 200C. For the bacon, lay the slices on a baking tray linked with foil or baking paper. Pour over a cup of water (which stops the bacon from burning) and place in the oven until golden and crispy, flipping halfway.

- Place your sausages in a pot with water and put on the stove on medium high heat until the water comes to a simmer. Remove and place on a baking tray. Drizzle with olive oil and place in the oven until crispy and golden brown.

- Slice your tomatoes in half and toss with olive oil. Season with salt and pepper. Place in the oven cut side up until browned and bursty.

- Halve and slice your avocados.

- Cook your eggs according to your liking! I like mine soft scrambled, low and slow.

- When all the other components are almost ready, place your sliced bread in the oven, removing when golden brown. Serve with the rest of the ingredients and finish with parsley and a good crack of pepper.
