Cranberry Almond Biscotti

Recipe makes about 8 servings of biscotti

Ingredients: 

- 1 cup cranberries

- 1 cup almonds

- 2 tsp orange zest (zest of 1 orange)

- 5 egg yolks

- 5 egg whites

- 3/4 cup sugar

- 400g flour

- Pinch of salt


Instructions:

- Preheat the oven to 180C

- Combine flour, orange zest and salt in a bowl.

- Beat the egg yolks with the sugar in a bowl. Add to the flour mixture and whisk until combined - the mixture should look like sand. Fold in the pistachios and cranberries.

- Using a hand mixer, beat the egg whites until stiff. Fold into the flour mixture.

- Form the mixture into two logs on a baking sheet. Place in the oven for 15 minutes or until firm. Remove and let cool, then slice thinly. Arrange evenly on the baking sheet and bake for another 15 minutes, flipping halfway, until the biscotti are golden brown.

- Let cool, then store in airtight containers.
