Brussels Sprouts and Apple Salad

Recipe serves 2

Ingredients:

- 200g Brussels sprouts, halved

- 1/2 cup Israeli couscous

- 1 apple, sliced

- 1/2 cup roasted pecans, chopped 

- 1/2 cup cranberries

- Honey mustard dressing: 1 tbsp mustard, 2 tsp honey, 2 tbsp olive oil, 1 tbsp apple cider vinegar, salt and pepper to taste

Instructions:

- Preheat the oven to 190C. Toss Brussels sprouts with salt, pepper and olive oil. Lay on a roasting tray and bake for 20 minutes or until golden brown and caramelised. Let cool.

- Cook couscous according to package instructions. Rinse with cold water and drain.

- Toss Brussels sprouts with apples, couscous, pecans and cranberries. Drizzle with the dressing and season with additional salt and pepper to taste.
