Giant Couscous Salad with Tahini Dressing

Recipe serves 3-4

Ingredients:

For the salad:

- 1 cup giant couscous

- 1 cucumber, diced

- 1 pack cherry tomatoes, quartered

- 1 cups herbs of your choice (parsley, coriander, basil or dill works great)

- 1/2 cup roasted nuts, chopped

- 1/2 cup cranberries

- Tahini dressing: 2 tbsp tahini seasoned with salt and pepper, 1 tbsp pomegranate molasses, whisked with cold water until smooth

Instructions:

- Cook the couscous according to package instructions, then rise and drain. Toss with olive oil, salt, pepper and pomegranate molasses.

- Mix the marinated couscous with the rest of the ingredients, seasoning with extra salt, pepper and pomegranate molasses to taste.

- Finish with the tahini dressing before serving (this salad also goes great with a maple mustard dressing, made with mustard, maple syrup and lemon juice)
