Rose Harissa Orzo

With roasted vegetables and harissa marinated prawns

Recipe serves 2-3

Ingredients:

- 2-3 medium zucchini, cut into cubes

- 2-3 aubergine, cut into cubes

- 1 cup orzo

- 10 large prawns

- 2 onions, sliced

- 3 cloves garlic, sliced

- 1 can chopped tomatoes

- 1 tsp tomato paste

- 3 tbsp rose harissa

- Lime wedges to serve

Instructions:

- Toss zucchini and aubergine with salt, pepper and olive oil, and roast in an oven preheated to 180C until tender and starting to brown

- Heat oil in a pan and fry onions and garlic on medium heat until the onions are caramelised, seasoning with salt and pepper

- Add in the roasted vegetables, followed by the canned tomatoes, tomato paste and 2tbsp rose harissa

- Cook orzo in a separate pot according to package instructions, then add to the sauce, adding pasta water as needed. Season with salt and pepper to taste.

- Marinate prawns with the remaining 1tbsp rose harissa, salt and pepper, then fry in a pan until cooked

- Serve the pasta topped with the pan fried prawns and a squeeze of lime
