Green Goddess Salad

Recipe serves 4

Ingredients:

For the dressing:

- 70g pine nuts

- 3 cloves garlic, sliced

- 1 cup parmesan cheese

- 1 large shallot, diced

- 50g basil

- 100g baby spinach

- 25g chives

- Juice from 1/2 a lemon

- 2 tsp mustard

- 1/4 cup olive oil

- 1tbsp honey

- 10g mint

For the salad:

- 2 heads baby gem lettuce, chopped

- 1 cucumber, chopped

- 3 stalks spring onions, chopped

- 1 bag tortilla chips

Instructions:

- In a food processor, pulse the pine nuts, cheese and garlic. Add in the shallots and pulse again. Add in the baby spinach, basil, chives, mint, lemon juice, mustard, olive oil, honey and pulse until the dressing is smooth and creamy. Salt and pepper to taste.

- Toss your lettuce, cucumber and spring onions with the dressing. Serve with tortilla chips.
