Pesto Chicken Sandwich

Recipe makes 2 sandwiches

Ingredients:

- 4 slices sourdough, toasted

- 250g chicken breast

- 2 tsp paprika

- 1 avocado, thinly sliced

- 2 large tomatoes

- Handful of rocket

- 4 tbsp pesto

- 6 slices of mozzarella

Instructions: 

- Slice your tomatoes and salt generously. Leave to drain in a strainer.

- Season your chicken breast with salt, pepper and 2 tsp of paprika. In a pan with olive oil, sear on medium heat until golden brown. Remove and set aside.

- To assemble the sandwich, spread pesto on your toasted sourdough before layering with mozzarella, chicken breast, tomato slices, avocado and rocket. Press down with the other slice and cut into half before serving.
