Green Salad

Ingredients:

- 300g marinated feta, or normal feta (mine came marinated with olives)

- 2 heads lettuce, chopped

- Juice of 1 lemon

- 1 tbsp olive oil

- 2 stalks spring onions, sliced

- 100g dill, roughly chopped

- 2tsp dried oregano

Instructions:

- In a bowl, toss the spring onions, herbs and lettuce.

- Squeeze over the lemon juice and drizzle with olive oil. Top with the feta. Season with salt and pepper. Using your hands, massage the dressing into the leaves, crumbling the feta. Taste for seasoning before serving.
