Fig and Mozzarella Salad

Ingredients:

- 4 figs, sliced

- 1 ball buffalo mozzarella

- 1 avocado, sliced

- 100g baby spinach

- 1/4 cup roasted pecans, chopped

- 2 tbsp olive oil

- 1/4 cup balsamic vinegar

Instructions:

- To make the balsamic drizzle, heat the balsamic vinegar in a small saucepan until it thickens and is glossy. Let cool.

- Toss the baby spinach with olive oil, salt and pepper. Lay out on a large platter and top with the figs and avocado. Tear your buffalo mozzarella and place on the salad. Finish with the pecans and additional salt and pepper.

- Drizzle generously with the balsamic vinegar before serving.
