Mushroom Tart

Recipe makes one tart (serves 4)

Ingredients:

- 400g mixed mushrooms

- 2 large onions, sliced

- 5-6 sprigs thyme

- 3-4 sprigs rosemary

- 2 tbsp balsamic vinegar

- 1 sheet puff pastry

- Egg wash: 1 egg whisked with 1tbsp water

- 3 tbsp grated parmesan cheese

- To finish: 2 tsp parsley, finely chopped

Instructions:

- Sauté your sliced onions in a pan with olive oil until caramelised. Season with salt and pepper to taste. Set aside.

- In the same pan, heat olive oil on medium high heat. Sauté your mixed mushrooms, adding in 3-4 sprigs of thyme and rosemary. Season with salt and pepper. When the mushrooms are starting to brown, add in your balsamic vinegar and let reduce to a glaze. Taste, adding in more salt, pepper and balsamic vinegar if necessary. Remove the herbs and set the mushrooms aside.

- Preheat your oven to 200C. Roll out your puff pastry and lightly score a one inch border around the edges. Using a fork, prick the base of the puff pastry, but not the border. Layer over your caramelised onions followed by the mushrooms. Remove the leaves from your remaining sprigs of thyme and sprinkle over the tart. Sprinkle over parmesan cheese.

- Egg wash the border of the pastry before placing it in the oven for 30 minutes or until the edges of the puff pastry and the mushrooms are golden brown. Remove from the oven and garnish with chopped parsley before slicing and serving.
