‘Nduja Chicken

Recipe serves 4

Ingredients:

- 8 chicken thighs

- 2 tbsp ‘nduja paste

- 4 large tomatoes, quartered

- 2 onions, sliced

- To serve: handful of basil leaves, torn

Instructions:

- Preheat your oven to 190C

- Place your tomatoes and sliced onions in a baking tray. Place your chicken on top, and season with salt, pepper and ‘nduja. Drizzle over olive oil before placing in the oven for 40-45 minutes, until the chicken skin is crispy.

- Remove from the oven and serve garnished with basil.
