Mushrooms on Toast

Recipe serves 2

Ingredients:

- 500g mixed mushrooms

- 3 sprigs thyme

- 3 cloves garlic, minced

- 1 tbsp balsamic vinegar

- To serve: toasted bread, spreads of your choice, chilli flakes and herbs (parsley/thyme)

Instructions:

- Heat butter or oil in a pan over medium high heat, then add in your mushrooms. Season with salt and pepper.

- Sear until starting to brown and most of the liquid has evaporated

- Add in your thyme and garlic, and cook until fragrant. Add in your balsamic vinegar.

- When the mushrooms are golden brown and crispy, remove from the pan and set aside. Discard the thyme sprigs.

- Toast your bread. I like to spread ricotta, mashed avocado or bacon jam on mine, but you can serve the mushrooms on their own too! Top with your mushrooms and finish with black pepper, chilli flakes and herbs.
