Mussels with Chorizo and White Wine

Recipe serves 2

Ingredients:

- 1kg mussels, cleaned

- 2 chorizo sausages

- 4 shallots, sliced

- 5 cloves garlic, minced

- 187ml white wine

- 125g mascarpone

- 25g parsley, finely chopped

- 1tbsp chives, finely chopped

- 2 tsp chilli flakes

- To serve: 4 slices ciabatta, additional herbs and chilli flakes


Instructions:

- In a pot, sauté your shallots in olive oil until caramelized. Add in your garlic and cook until fragrant. Remove from the pot and set aside.

- In the same pot, add the chorizo meat and let brown. Return the shallots and garlic to the pot and deglaze with white wine.

- Let simmer for a minute, then add in your mussels. Cover and cook for 5-6 minutes until all the musses are opened.

- While the mussels are cooking, toast your ciabatta in a pan with olive oil until golden.

- Add in your mascarpone, parsley, chives and chilli flakes and cover again. Let the mascarpone melt into the sauce.

- Season the mussels with salt and pepper to taste, and serve alongside your toasted bread. Garnish with additional herbs and chilli flakes.
