Peach and Mortadella Salad

Recipe serves 4

Ingredients:

- 4 peaches, sliced

- 2 heads romaine, roughly chopped

- 1/2 wheel of brie, sliced

- 1/4 cup balsamic vinegar

- 1/4 cup roasted hazelnuts, chopped

- Handful of basil, torn

- 2 tbsp olive oil

- 8 slices mortadella (I used pistachio mortadella)

Instructions:

- To make the balsamic drizzle, heat the balsamic vinegar in a small saucepan until it thickens and is glossy. Let cool.

- Toss the romaine with olive oil, salt and pepper. Lay out on a large platter and top with the peaches and mortadella. Place your slices of brie and torn basil on the salad. Finish with the hazelnuts and additional salt and pepper.

- Drizzle generously with the balsamic vinegar before serving.
