Saucy Salad

I refer to this as my saucy salad, not because it is drenched in a sauce of its own but because I always serve it with heavier, curry-based or saucy dishes. The light, lemon and cumin dressing provides a subtle base that goes well with almost anything.

Ingredients:

-1 1/2 cup couscous

- 1 pack cherry tomatoes, quartered

- 2 cucumbers, deseeded and cubed

- 1 large avocado, diced

- 1 cup herbs (I like parsley and mint, or coriander)

- 1/2 cup cranberries

- 1 cup roasted pecans, chopped

- For the dressing: Juice of 1 lemon, 2 tsp cumin, 1 tsp turmeric

Instructions:

- Pour your couscous into a bowl and add pour in boiling water until the couscous is just covered. Leave to steam before fluffing with two forks.

- Place your chopped cherry tomatoes and cucumber into a colander and season generously with salt. Let drain over the sink (this stops the salad from getting too wet).

- Whisk your ingredients for the dressing. Salt and pepper generously to taste.

- In a large bowl, add your couscous, coriander, cherry tomatoes, cucumber, avocado, herbs, pecans and cranberries. Pour over the dressing and toss. Season with salt and pepper to taste.
