Smoked Fish Salad
Recipe serves 6
Ingredients:
- 2 fillets smoked herring (or fish of your choice)
- 4 large tomatoes, diced
- 1 avocado, diced
- 1/2 onion, diced
- 1 tbsp mustard seeds
- 1 tbsp mustard
- 1/2 cup dill, chopped (or 2 tsp dried dill)
- 3 stalks spring onions, chopped
- Juice of 1/2 a lemon
To serve:
- Rye bread or lettuce leaves
Instructions:
- Salt your diced tomatoes and let drain in a colander
- In a bowl, combine the onions, tomatoes, avocado and spring onions. Shred your smoked fish in. Add in the dill, lemon juice mustard seeds and mustard. Season with salt and pepper to taste, adding more mustard or lemon juice if needed.
- Serve spread on rye bread or in lettuce wraps
