Za’atar Lemon Roasted Chicken

Ingredients:

For the chicken:

- 4 chicken thighs

- 2 tbsp za’atar

- 4 tsp cumin

- 2 onions, sliced

- 1 lemon, sliced

For the romesco sauce:

- 150g almonds

- 150g cherry tomatoes

- 3 red bell peppers from a jar

- 2 garlic cloves

- 1 tsp chilli flakes

- 1 tsp smoked paprika

To finish:

- 10g parsley, roughly chopped

- Za’atar

- Flaky salt

- Focaccia or crusty bread

Instructions:

- Preheat your oven to 200C

- Toss the sliced onions and chicken with salt, pepper, olive oil, za’atar and cumin. Place the onions in a baking tray and place the chicken thighs on top. Arrange lemon slices around. Place in the oven for 30 minutes or until the chicken is golden brown and cooked.

- To make the romesco sauce, place all the ingredients except the olive oil in a food processor. Blend, then drizzle in olive oil, blending until smooth. Salt and pepper to taste.

- Spoon your sauce onto a plate and top with the onions and chicken. Sprinkle over more za’atar, flaky salt and parsley. Serve with focaccia or crusty bread.
