Apricot Harissa Chicken

Recipes serves 4

Ingredients:

- 4 chicken thighs/legs

- 2 tbsp apricot harissa

- 6 cloves garlic, peeled and crushed

- 2 onions, sliced

- 2 limes, sliced

- Coriander and lime, to garnish

Instructions:

- Season chicken with salt and pepper and sear in a hot pan until the skin is starting to crisp up

- Rub chicken with apricot harissa and season with additional salt and pepper. Toss onions with olive oil and apricot harissa in a baking tray and place chicken on top. Place garlic cloves and slices of lime under the skin of the chicken.

- Place in an oven preheated to 170C for about 45 minutes, or until the internal temperature of the chicken reaches 165C. Baste once or twice with the juices.

- Serve with couscous, salad or rice, and garnish with coriander and a squeeze of lime.
