Healthy Mince Pies
Made with homemade shortcrust pastry and mincemeat, sweetened with orange juice
Recipe makes 24 mince pies
Ingredients:
For the pie crust:
- 350g all purpose flour
- 225g cold butter, cubed
- Pinch of salt
- 1 egg
For the mincemeat:
- 1 apple, peeled and chopped
- 150g dried fruit (cranberries, raisins, apricots, currants)
- 1/2 teaspoon each: ground ginger, cinnamon, nutmeg, allspice, cloves
- Juice of 1 orange
- 1/2 tbsp coconut oil
- Egg wash (made with 1 egg whisked with 2tbsp cold water)
Instructions:
- To make the pie crust, place the flour, butter and salt into a bowl and rub the butter into the flour until it reaches a sand-like consistency
- Stir the egg into the mixture and add cold water until the mixture binds, then knead into a ball and wrap with cling film
- Refrigerate for a minimum of 20 mins while you make your mincemeat
- Place all the mincemeat ingredients into a pot and simmer for about an hour on low heat, until the apples are soft, adding water until it reaches a jammy consistency
- Roll out the dough from the fridge using a rolling pin, and cut out circles to line a muffin tin, repeating until the tin is filled
- Press pastry in and fill about 2/3 way with mincemeat
- Roll pastry out again and cut lids for the mice pies, then place on top and brush with egg wash
- Place the pies in a 190C preheated oven and bake for 25 minutes or until golden brown
