Gingerbread Banana Bread

Perfect spread with a scoop of nut butter

Recipe makes one loaf of cinnamon banana bread

Ingredients:

- 1/3 cup olive oil

- 1/4 cup maple syrup (add up to 1/2 a cup for a sweeter loaf)

- 2 eggs

- 2 and a half ripe bananas

- 1/4 cup of milk

- 1 tsp baking soda

- 1tsp vanilla extract

- 1/2 tsp salt

- 1tsp each: cinnamon, ginger, all spice, cloves, nutmeg

- 1 cup flour

- 3/4 cup almond flour

Instructions:

- Preheat oven to 165C

- Whisk together oil and maple syrup, then add in the eggs and whisk to combine

- Add in the mashed bananas and milk, and mix. Add in the vanilla extract.

- Combine the dry ingredients in a separate bowl, then add into the wet ingredients

- Oil your loaf pan thoroughly and line with baking paper. Pour the mixture in, and bake for 40 minutes or until a wooden skewer comes out clean.

- Let cool before slicing
